Let me tell you about how Italy changed my life—in the form of pistachio cream. For my 30th birthday, my husband and I went to Rome, and little did I know, I was about to fall hard for pistachio cream. Now, before this trip, I had never even heard of pistachio cream. I didn't know it existed, and I certainly didn’t expect it to steal my heart.

So, picture this: we’re at the Trevi Fountain, playing tourist, taking pics, soaking in all the vibes... and the heat is eating us up which makes us realize we never ate breakfast and we’re hungry. Like, about to turn into another person type of hunger. We pull up Apple Maps, trying to find something close, and we spot this café right around where we were standing that’s opening up in 20 minutes. We notice a whole crowd forming a line about 10 feet away and realize that it’s the cafe we just found. So, we hop in line too because “when in Rome, right?”

As we’re standing there waiting in the line, we see people coming out of this little cafe with croissants that are dusted with powdered sugar and there’s this green cream just oozing out of them. By the time the 10th person walks out with one, we’ve decided we’re definitely getting one because if 10 people like this thing, then clearly we need to have one.

After waiting in this line for about 30 minutes, we finally get inside and secure the goods. I take the first bite, and I’m telling you, everything went silent. That pistachio cream? Life. Changing. It was the most heavenly thing I have ever tasted, hands down. That croissant is the reason I’ll never look at pistachios the same way again. 

For the rest of the trip I ordered pistachio flavored anything and regretted none of it. On the plane ride back to America I made a list of flavor ideas - which all included pistachio cream - that I could shove into a cookie. And that my friends is how I came up with this treat.
